The culinary team of Kiahna Butterfield, Jayme Holden, Megan Clark Tchen, Emma Hanks and Ashley Ramirez impressed 20 industry-leading judges to earn a trip to the state competition.
The team cooked a three-course meal - all on two butane burners and within a one-hour time frame. The meal included oysters wrapped in prosciutto, beef braciole stuffed with spinach and roasted red pepper, Italian fennel carrots, mascarpone mashed potatoes, sauteed broccolini, and a country cake with Grand Marnier glaze.
The restaurant management team, consisting of Katherine Osburn, Skylar Bryan, Traes Hogan, Hanna Ledyard and Charlie Walters, also placed fourth and will advance to state.
The group had to design and pitch a restaurant concept to judges who are industry leaders in hospitality and management. The team’s restaurant concept is “Waunderlust Kitchen a Mediterranean.” The restaurant includes French, Italian, Greek and Tunisian inspired fast and casual dining.
The CSHS culinary department is led by Catherine Parsi.
The state ProStart contest will be held March 27-28 at the Waco Convention Center.
